Ketan Hitam is Bali’s most ceremonially significant rice, present at nearly every ritual offering, woven into the fabric of religious life on the island. Our Ketan Hitam is processed minimally: only the outermost hull is removed, leaving the bran layer fully intact and its extraordinary purple-black anthocyanin pigment undisturbed.
Glutinous and fragrant when cooked, with an almost floral aroma, it is the essential ingredient for bubur ketan hitam, the black rice porridge with palm sugar and coconut cream that is both everyday comfort food and temple offering. It can also be used to make tape ketan (fermented sticky rice), or blended into daily white rice for added nutrition and visual drama.
